A new luxury Japanese restaurant brought to life beneath one of London’s most prestigious hotels, creating an immersive dining experience in the heart of Mayfair.
The client was launching a new hospitality brand and had ambitious plans for its first venue. Creating a high-end restaurant that delivered exceptional food, atmosphere and design, whilst establishing a strong identity. Quality was paramount, and the programme was equally demanding with the client wanting to open as quickly as possible without comprising the build.
When the project commenced, Bidwells were instructed as Project Manager and Contract Administrators, but it quickly became apparent that the consultant team needed was not fully complete. While fit-out works were progressing on site, we appointed additional specialist teams to support the project, bringing together structural, M&E, lighting, catering, IT, AV, Building Control and CDM expertise. This allowed the design development and construction progress simultaneously, maintaining momentum and protecting the programme.
With interior designers based in Los Angeles coordination was essential. Regular design team meetings ensured decisions could be made quickly, outstanding design issues resolved efficiently, and construction activities aligned with the evolving vision.
One of the most significant challenges emerged during the early stages of the fit-out. Acoustic performance was central as the restaurant intended to deliver a vibrant dining and nightlife experience, sat beneath occupied hotel rooms where guest comfort could not be compromised. As the project progressed, it became clear that the existing structure did not have sufficient capacity to accommodate the acoustic solution required.
Working closely with the wider design team, a structural solution was developed during construction that enabled the installation of a specialised acoustic barrier and implementing it mid-fit-out without affecting the programme. The enhanced acoustic separation was successfully delivered while maintaining progress on site.
Careful management of the highly sensitive site operational environment, located beneath the Grosvenor Hotel, construction activities had to be coordinated to minimise disruption and protect the hotel experience throughout the works. Despite the constraints of working below a live hospitality environment, the project was delivered without complaints or operational issues for the hotel.
Numerous change requests were incorporated throughout the fit-out. These changes were carefully managed to ensure design quality remained at the forefront.
The collaborative nature of this project team proved invaluable, enabling decisions to be implemented quickly and effectively as the scheme developed.
The delivering of the premium restaurant and nightlife venue boost exceptional acoustic performance, grand interiors and unique dining experience. Despite the technical challenges an ambitious programme, restricted budget and continual design development, the project was successfully delivered.
